Instructions

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup or your fingers to pack it down tightly.
  3. Place the crust in the refrigerator to set while you prepare the filling.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
  5. Gradually add the powdered sugar and vanilla extract, continuing to beat until well combined and fluffy.
  6. In a separate bowl, whip the heavy cream until stiff peaks form. This will give your cheesecake a light and airy texture.
  7. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Be careful not to deflate the whipped cream.
  8. Remove the crust from the refrigerator and pour the cream cheese filling over the crust. Spread it evenly with a spatula.
