- 1 teaspoon Dijon mustard (optional)
- 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
- Salt and pepper, to taste

- Replace brie with camembert, goat cheese, or cream cheese.
- Add caramelized onions or spinach for richness.
- Use granny smith apples for tartness or honeycrisp for sweetness.
- Add chopped walnuts or pecans for crunch.
- Drizzle honey or maple syrup before baking for extra sweetness.
Instructions
- Cut a horizontal pocket into each chicken breast, without slicing through. Season inside and out with salt and pepper, and optionally spread a little Dijon mustard inside.
- Layer thinly sliced apples and brie inside each pocket, adding a pinch of thyme between layers. Avoid overstuffing to prevent leakage.
- Close the opening with toothpicks or kitchen twine. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear chicken for 2–3 minutes per side until golden.
- Preheat oven to 375°F (190°C). Transfer skillet to oven and bake 15–20 minutes, or until the chicken reaches 165°F (74°C) internally. Let rest 5 minutes before slicing.
- Slice diagonally to reveal the creamy filling. Drizzle with pan juices and garnish with fresh thyme or apple slices.
