- 1 lb (450 g) thick-cut bacon, diced
- 1 large onion, finely chopped
- 2 medium apples, peeled, cored, and diced
- 2 cloves garlic, minced
- ¼ cup (50 g) brown sugar
- 2 tablespoons apple cider vinegar
- ½ cup (120 ml) apple juice or cider
- 1 tablespoon olive oil (optional)
- ½ teaspoon smoked paprika
- ¼ teaspoon ground black pepper
- 1 teaspoon Dijon mustard (optional)
- Add red pepper flakes for heat.
- Use shallots instead of onions.
- Swap some brown sugar with maple syrup.
- Add thyme or rosemary for herbal notes.
- Pulse finished jam for a smoother texture.
Instructions
- In a skillet, cook diced bacon over medium heat until crisp (8–10 minutes). Remove with a slotted spoon; leave 1 tbsp fat in the pan.
- Add onion and cook 5 minutes. Add apples and cook 5–7 minutes more until softened. Stir in garlic and smoked paprika for 1 minute.
- Add brown sugar, apple cider vinegar, and apple juice. Stir well and scrape browned bits. Return bacon to pan and simmer on low 25–30 minutes until thick and jam-like, stirring occasionally.
- Add more sugar, vinegar, or pepper as needed. Add a splash of juice if too thick.
- Let sit 10–15 minutes, then transfer to jars. Chill at least 1 hour before serving.

- Adjust sweetness to your taste.
- Store in the refrigerator for up to 2 weeks.
