Ingredients

- 1 tbsp olive oil
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 tsp turmeric
- 0.5 tsp ginger (ground)
- 2 carrots (sliced)
- 2 stalks celery (chopped)
- 1 lb chicken breast (diced)
- 1 small head cauliflower (cut into florets)
- 6 cups chicken broth
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion until soft.
- Add garlic, turmeric, and ginger; cook briefly.
- Add carrots and celery and stir.
- Add chicken and cook lightly.
- Add cauliflower and broth.
- Simmer for 20–25 minutes.
- Season with salt and pepper and serve.
