Description

This Amish chicken and noodles recipe is hearty, old-fashioned comfort food made with tender chicken, thick Amish-style egg noodles, and a rich gravy – traditionally served over mashed potatoes.

Ingredients

Scale
  • 1 approx. 4 pound whole chicken cooked in water with 2 celery ribs, small onion, 3 cloves garlic, and 1/2 teaspoon salt
  • 3 tablespoons butter, browned
  • 1 teaspoon dried onion flakes (or finely chopped onion as desired)
  • 1 teaspoon chicken broth base (Better than Bouillon)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 batch fresh, homemade Amish noodles (or approx. 12 oz. dried Amish egg noodles)
  • 1 tablespoon flour mixed with a bit of water to make a slurry
  • 1 egg yolk, optional
  • 1/2 teaspoon parsley flakes

Instructions

  1. Place whole chicken in a large pot and almost cover with water. Add celery, onion, garlic, and a little salt. Bring to a boil, reduce heat, cover, and simmer 2 to 4 hours.
  2. Once cool enough, remove the chicken from the bones, shred or chop the meat, and strain broth. Set both aside.
  3. While the chicken is cooking, prepare a batch of homemade noodles.
  4. In the empty pot, melt butter over medium/low heat and cook until lightly browned. Add dried onion, broth base, pepper, and garlic powder. Sauté a bit.
  5. Add approximately 6 cups broth and bring to a full boil. Add noodles (a few at a time) and boil until tender, stirring occasionally.
  6. Slowly add a bit of water into the flour while whisking to make a smooth slurry. Add an egg yolk (if using) and stir it into the noodles until thickened to a gravy-like consistency.
  7. Return shredded chicken to the pot.
  8. Add the parsley flakes, and add seasoned salt as needed. Stir and enjoy on its own or serve over mashed potatoes or homemade waffles.

Notes

  • Cooking time for noodles depends on size and thickness.
