  • 2 teaspoons almond extract
  • 1 cup powdered sugar
  • 1 to 2 tablespoons milk
  • 1 teaspoon almond extract (for icing)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a stand mixer, cream the butter and sugar together until light and fluffy. Add the egg and almond extract, mixing until well combined.
  4. Gradually add the dry ingredients into the wet mixture, mixing until the dough is smooth.
  5. Roll the dough into small balls (about one tablespoon each) and gently flatten them into disks using your hands or the bottom of a glass.
  6. Place the dough discs on the prepared baking sheet and bake for 8 minutes. The cookies should not appear browned, but they will firm up as they cool.
  7. In a small bowl, whisk together powdered sugar, milk, and almond extract until smooth.
  8. Once the cookies have completely cooled, spread a thin layer of icing over each cookie. Allow the icing to set for about 10 minutes before serving.
