- ¼ teaspoon salt
- 1 cup unsalted butter, room temperature
- ¾ cup granulated sugar
- 1 large egg
- 2 teaspoons almond extract
- 1 cup powdered sugar
- 1 to 2 tablespoons milk
- 1 teaspoon almond extract (for icing)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a stand mixer, cream the butter and sugar together until light and fluffy. Add the egg and almond extract, mixing until well combined.
- Gradually add the dry ingredients into the wet mixture, mixing until the dough is smooth.
- Roll the dough into small balls (about one tablespoon each) and gently flatten them into disks using your hands or the bottom of a glass.
- Place the dough discs on the prepared baking sheet and bake for 8 minutes. The cookies should not appear browned, but they will firm up as they cool.
- In a small bowl, whisk together powdered sugar, milk, and almond extract until smooth.
- Once the cookies have completely cooled, spread a thin layer of icing over each cookie. Allow the icing to set for about 10 minutes before serving.
