- 1½ lbs baby potatoes (or Yukon gold, cut into chunks)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon dried rosemary or thyme
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon ground black pepper
- ¼ teaspoon chili flakes (optional, for heat)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prepare the potatoes: Wash the potatoes thoroughly under cold running water to remove any dirt. Pat them completely dry with a kitchen towel. If using baby potatoes, cut them in half; if using larger potatoes, cut them into evenly sized chunks so they cook at the same rate.
- Season the potatoes: Place the potatoes in a large mixing bowl. Drizzle with olive oil, then add garlic powder, paprika, dried herbs, salt, black pepper, and chili flakes if using. Toss everything together well, making sure each potato piece is evenly coated with oil and seasoning for maximum flavor.
- Preheat the air fryer: Preheat your air fryer to 400°F (200°C) for about 3–5 minutes. Preheating helps the potatoes start crisping immediately once they go in.
- Air fry the potatoes: Arrange the seasoned potatoes in the air fryer basket in a single layer. Avoid overcrowding; cook in batches if necessary. Air fry for 18–20 minutes, shaking the basket or tossing the potatoes halfway through cooking to ensure even browning on all sides.
- Check for doneness: The potatoes should be golden brown on the outside and tender on the inside when pierced with a fork. If you want extra crispiness, air fry for an additional 2–3 minutes.
- Serve: Transfer the roasted potatoes to a serving bowl. Garnish with freshly chopped parsley if desired and serve hot as a delicious side dish with meats, burgers, or breakfast dishes.
