- 1 tablespoon oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 medium sweet potatoes, peeled and cubed
- 1 can diced tomatoes (14 oz)
- 1 teaspoon chili flakes
- 4 cups vegetable broth
- 1/2 cup peanut butter (natural, unsweetened)
- 2 cups chopped cabbage (optional)
- 1 teaspoon salt
- 1 tablespoon lime juice
Instructions
- Heat oil in a large pot over medium heat. Sauté the onion for 5 minutes until soft.
- Add garlic and ginger and cook for another minute until fragrant.
- Stir in sweet potatoes, tomatoes, and chili flakes. Simmer for 3–4 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce heat and simmer for 20 minutes or until the sweet potatoes are tender.
- Stir in the peanut butter until fully melted and the broth is creamy.
- Add cabbage, if using, and cook until just softened.
- Season with salt and stir in the lime juice.
- Serve hot, optionally over rice or with crusty bread.
