  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ cup buffalo wing sauce
  • Neutral oil (vegetable or canola) for frying
  • 2 cups finely shredded green cabbage
  • 1 cup shredded carrots
  • ½ cup ranch dressing
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper, to taste
  • 4 sandwich or hamburger buns
  • Lettuce leaves (optional)
  • Tomato slices (optional)
  • Extra buffalo sauce, if desired

Instructions

  1. Place the chicken breasts in a bowl and pour the buttermilk over them. Turn to coat evenly, cover, and refrigerate for at least 30 minutes or up to overnight for maximum juiciness.
  2. In a shallow bowl, stir together the flour, garlic powder, onion powder, paprika, salt, and pepper until evenly combined.
  3. Remove the chicken from the buttermilk, letting any excess drip off. Press each piece firmly into the seasoned flour, making sure all sides are fully coated.
  4. Pour oil into a deep skillet or heavy pan and heat over medium-high heat until hot but not smoking.
  5. Carefully add the chicken to the hot oil. Cook for about 5–7 minutes per side, turning once, until the crust is golden and the chicken is cooked through (internal temperature should reach 165°F).
  6. In a large bowl, toss the shredded cabbage and carrots together. In a small bowl, whisk the ranch dressing with apple cider vinegar, then pour over the vegetables. Mix well and season with salt and pepper to taste.
  7. Transfer the cooked chicken to a paper towel–lined plate. While still warm, spoon or brush buffalo sauce over each piece, coating evenly.
  8. Lightly toast the buns in a skillet or oven until just golden for added texture.
  9. Place a buffalo-coated chicken breast on the bottom half of each bun. Top with a generous scoop of ranch slaw, plus lettuce, tomato, or extra sauce if you like.
  10. Cap with the top bun and serve immediately while the chicken is hot and crispy.
